I just got the dreaded call from nurse practitioner at my doctors office to talk with me about my blood test results and it seems that I have hypoglycemia and must watch my diet very closely. It also showed that my liver levels are still messed up and must go see a specialist to have tests ran, but thats another blog post for another day. So this means my menu plan must be swapped out a little so that I can get better.
MONDAY Stuffed peppers – stuffed with veggies for me
TUESDAY Chicken and vegetable stir fry
WEDNESDAY Hamburger soup – same thing, only veggies for me
THURSDAY Cabbage and kielbasa – no kielbasa for me
FRIDAY Pizza – skip day for me and Ill enjoy some pizza
SUNDAY Oven roasted chicken and vegetables – roasted vegetables only for me
Since I have already been decreasing my carb in take and my sugar in take and since Im not a huge fan of meat to begin with I think this transition shouldn’t be too rough on me. Is anyone else on a special diet for hypoglycemia and could share some tips?
