Every since my husband had me hunt down some Loaded Baked Potato Salad that he saw someone eating in the break room at work I knew I needed to make some of my own. So last weekend while grilling some barbecue chicken I decided that the only logical side item for this meal would have to be loaded baked potato salad. I sort of winged it for most of the recipe because it is pretty straight forward, but no matter how simple this meal is it is incredible delicious!
My favorite thing about this recipe is that the toppings are unlimited, you could add just about anything that you love on your loaded baked potatoes!
LOADED BAKED POTATO SALAD
8 potatoes peeled (leave a little skin on for extra taste)
2 teaspoons of seasoning salt
16 ounces of sour cream
6 slices of cooked chopped bacon
1 cup of mayo
1/4 teaspoon of pepper
2 cups of shredded cheese
6 chopped green onions
Cut the potatoes and boil until they are just slightly tender.
Drain potatoes and sit them aside to cool.
Combine sour cream, mayonnaise, pepper and seasoning salt. Mix thoroughly.
Add cooked potatoes to mix.
Add chopped green onions, bacon and cheese (leave some set aside for topping as well). Mix.
Top with remaining green onions, bacon and cheese.
