Cheesy Taco Casserole // Giveaway

Pasta Chips

I was recently sent some samples of Pasta Chips to try out. I admit that I was quite a bit hesitant to try out these chips after I tried making chip like snacks out of spaghetti noodles (thanks a lot Pinterest) by frying up cooked spaghetti noodles and ended up with a greasy mess of fried noodles. So naturally that means I let the kids try these first (don’t judge, Im sure Im not the only one who does this). This is what they thought:

Pasta Chips Alfredo

This one was an all around favorite. That was not a big surprise though since my kids adore chicken alfredo so much!

Pasta Chips Spicy Tomato Herb

Ethan really liked this one and he said it was a close call between this one and the alfredo.

Pasta Chips Garlic Olive Oil

None of us liked this one. For us there was too much garlic seasoning, while we do like garlic we like it in very small amounts. I bet that someone who really likes garlic would adore these.

 

While all three kids were hesitant to try these because of the name, all three ended up agreed that they tasted very similar to traditional chips. Which was nice to hear because they have 60% less fat than traditional chips.

Taco Casserole Recipe

That same night the kids asked for tacos for dinner which normally I say yes to because it is a super easy dinner, that night I just wasn’t feeling like tacos. So I compromised with them and made Cheesy Taco Casserole. Honestly, I have never made this dish before, but it ended up being a family favorite. In fact one of the boys friends came over the next day and ate some and kept raving about how delicious it was! I really encourage you to try it with your family, I promise that it will be a big hit!

Cheesy Taco Casserole

Ingredients

1 lb of ground beef
package of taco seasoning
1/2 onion chopped
1 1/2 cup shredded cheese
1 can of diced tomatoes with green chiles
bow tie noodles (or noodle of your choice)
1 cup of crushed up Pasta Chips Spicy Tomato Herb flavor
1 can cheesy pasta sauce (near the pasta sauces at the grocery)

Directions

– Cook the onion and ground beef until beef is browned

– Add taco seasoning package

– While the meat is browning, cook your noodles completely.

– Drain your diced tomatoes with green chiles and combine your onion, ground beef and onion, cheesy pasta sauce, noodles and stir until mixed very well.

– Pour your mix into a deep casserole dish. Top with your pasta chips and then with shredded cheese.

– Cook at 350 degree for 20 minutes.

    I will DEFINITELY be on the lookout for pasta chips and will be making this taco casserole! I caught whatever sickness seems to be going around and want nothing more than an easy, comforting casserole :)
