Jaydes birthday was just the day before the first day of school. Of course you know that means Im running around like a chicken with her head cut off. Its a tradition though that I make the cake, and I had fully planned to do so, until I realized that I didnt even have a single egg to make her cake with. Its times like this I wish that we ate more eggs.
I didn’t have the time to run and buy eggs, and I was dreading telling her that I cant make her a birthday cake. Then I remember the Betty Crocker Shake -N- Pour, which luckily came in the same flavor (chocolate) that she wanted her cake to be. To my surprise no eggs were needed. I was saved!
Ill be honest here though, I had two concerns with this “too easy to be true” mix. First I was concerned was that it wouldn’t taste like traditional cake mix. Second I was concerned that it wouldn’t make enough cake.
To my surprise Shake-N-Pour did make the same amount as my traditional mix, just without the mess. Surely that meant that it wouldn’t taste the same as my traditional mix, but it did. I asked the whole bunch and no one could tell a difference between these and the cake I normally make. I’d call that a win. Finally a shortcut that did not sacrifice quality.
In all I was pleased, not only did the mix save the day by not requiring eggs but it was also super simple to mix. So simple that it would be PERFECT for the kids to use. Even though I see myself buying these more often in the future because they were so simple. I will be keeping a package or two of Shake -N- Pour in my cabinets for those cupcake cravings that we all seem to get!

Here’s the form, couldn’t find it before refreshing. Just an FYI- you can use 1 TBSP of mayonnaise for each egg as a substitute in most recipes (not angel food cake or something that obviously depends on eggs, but it mostly works). Also great in things like meatloaf, etc. Very rarely can you taste a difference and when you can it most often enhances the flavor.
